Wild Game Beer Dinner 2022

Join us October 13th at 7pm for our seasonal beer dinner at Caboose Tavern! Executive Chef David Rabin has crafted five incredible courses featuring wild game, paired with specially selected Caboose beers from Chief Education Officer Brian Koch.

$130 per person (including alcohol).

{First Course}

Rabbit

rabbit ravioli with house made ricotta, smoked carrot cream, pumpkin seeds, pumpkin oil, and pea shoots

{Second Course}

Venison

venison meatballs served with white bean hummus, house made pita, tzatziki, fire roasted peppers, and olives

{Third Course}

Bison

bison strip with acorn squash purée, sage and walnut chimichurri, and wilted bitter greens

{Fourth Course}

Emu

pan roasted emu with beet and horseradish purée, brûléed butternut squash, crispy mushrooms, and micro arugula

{Dessert}
