A Dining Experience Beyond Standard Bar Fare

restaurant vienna va chef and team

Our executive chef has a deep appreciation for Appalachian cuisine, culinary history, the science of flavor, and sustainability. With our diverse kitchen team at his back, Chef David creates menus that change with the seasons. Our ingredients are locally sourced and prepared with pride to create a dining experience that is elevated beyond standard bar fare.

Our restaurant in Vienna VA features farm-to-table ingredients and Appalachian cuisine. From macaroni and cheese to shrimp and grits, there is something delicious for everyone.

Our Fairfax VA location features a more communal menu meant for sharing. You will find nachos, sandwiches, buddha bowls, and even an avocado toast on this menu.

Originally from Rockville, MD, David got his start in the industry in 2006. His interest in food sparked as a child and has only grown from there. Throughout his career, David completed internships at Volt in Frederick, MD, and Michael Mina in San Francisco, CA. He has also worked at Bourbon Steak in Georgetown, was the Sous Chef at Charlie Palmer Steak, the Chef de Cuisine at Caboose, and then the Executive Chef of Brine. David returned to Caboose as our Executive Chef in 2018, developing menus for the restaurant Vienna VA and Fairfax locations.

He really enjoys the outdoors, history, and of course, food! David loves the ability to create memories for people. “My goal is to have people go back in time and remember the first time they tried that ingredient or dish. It is my job to give food a second life, something that is hopefully beautiful and delicious.” David’s favorite cuisines are Japanese, Appalachian, and Mediterranean. His favorite dish at Caboose is the Pork Belly. “It is a fairly simple dish, but I get to put a little bit of flair into it with the miso paste.” His favorite Caboose beers are the Boxcar Brown Ale, the Hobo Stout, Bienvenidos Mexican Lager, or the Rambler Maibock.

When David is not at work, he loves to spend time with his wife, doggies, kitty, and chickens. David lives outside of Shenandoah on his mini farm with his beautiful wife, Kari.

"I like this spot. Stopped by here for lunch today while OneWheeling with a friend on the W&OD trail. You can get to it directly from the trail which is awesome. "

"Great Service, wonderful atmosphere, good beers, ciders and wines, plus the food was more than delicious, but also beautifully presented and a lovely blend of flavors. "

"Stopped by to check out the beer selection and was impressed with the selection and quality. Many folks were also eating and the food looked good but we had just had dinner. We had flights and enjoyed all of the varieties we tried. We plan to return."

"Come for the delicious beer and stay for the amazing food! I come pretty regularly and always have great food. The biscuits and gravy are some of the best I’ve eaten so think about coming on a Sunday if you want a casual brunch. Beer speaks for itself but I especially like the IPAs and the Pilsner."

"If pictures could say a thousand word’s I have one ‘Yum!’. What a great stop today. We hit the Caboose for lunch and a beer 🍺 or two 🍻 and had a wonderful time. My caps off to the chef and two thumbs up to the brew. Great food, great beer, and friendly service."

"Among the best breweries that I’ve tried both the atmosphere and food."

"For a brewery!?, the food is amazing! Completely unexpected. As a foodie I was more than impressed. Locally sourced and from scratch offerings. I had artesian pork bellies from a Maryland farm and Mountain Valley cheddar cheese with fig jam, honey, and cornichon pickles. And paired with delicious beer!"
